Here's the latest food idol that need to be abolished in my home. It's homemade fudge. The boys have gone bazerk with this stuff. I have caught them climbing up on the counters to get at it. They have lied to me saying they did not eat any when the reynold's wrap was torn to shreds like a dog ate it. They have snuck around me with mouthfulls and have eaten it so fast that you might think it was a race. It got so bad last week that Jason even requested that I stop making it (for a season). So we made our last batch and gave it to the garbagemen and mail carrier last Thursday. Yes, they loved it! I even got a thank you from my mailman. It said, "thanks for the fudge. you're sweet."
So I though I'd share the recipe with you all. It's a tried and true, good old chocolate fudge recipe.
Fudge
1 cup sugar
1/2 tsp. salt
3 T. unsalted butter
1/2 cup heavy whipping cream
1 3/4 cup mini marshmallows
1 1/2 cups semi-sweet chocolate chips
1/2 tsp. pure vanilla extract
Optional mix-ins: 3/4 cup crushed peppermints or 3/4 cup chopped walnuts.
My favorite? half a bag of Andes mints melted in and also scattered over the top.
1. Line a 9-by-5 inch loaf pan with wax or parchment paper. Coat evenly with cooking spray.
2. Combine sugar, salt, butter, cream, and marshmallows in a heavy- bottomed medium saucepan. Heat, cook, stirring until butter and marshmallows are almosted melted (5-6 min.)
3. Bring mixture to a boil; cook, stirring occasionally, for 5 minutes.
4. Add chocoalte chips and vanilla to saucepan. Stir until melted and combined.
5. Mix in extras if desired.
6. Cool fudge in pan at room temperature for 3 hours.
7. Grip paper, lift out the fudge and place on cutting board. Discard paper. Cut in to one inch 24 pieces.

That's just what I need, one more food idol. (I'm typing this as I eat another of my food idols, Charleston Chews.)
